I fully support this! No restaurant food photos! As a person who has worked in restaurants for years, it pains me to see people letting food get cold while taking pictures. We put a lot of effort into making sure all your food is the right temperature when it arrives to the table.

Put some bread in the oven and leave it there until it turns black. No joke. Burn the hell out of it. Then crush it up in a food processor. You’ll have burnt bread crumbs to garnish things with that has a great flavor and texture. Great on top of pasta with cheese, or salads.

You’ll love it! French onion is very forgiving. And what a great find at the farmers market!

Soup is my favorite thing to make, especially with fun garnishes. It keeps well and can be so versatile.

I’d go with the Riesling. Moscato is too sweet. The Riesling is pretty sweet as well, so it’s important to cook it down. If you get to the end of cooking and it’s still too sweet, you can balance it out with a bit of Dijon mustard.

But I prefer to do that separately and then just plop the toasts on top. Makes cleanup easier and you’re not risking a nasty burn trying to pull boiling soup bowls out of the oven.

Also you can slice the bread and shred the cheese before you travel, then when you arrive it’s just a matter of reheating the soup (don’t travel with it hot, or it can cause a huge mess) and putting the cheese toasts in the oven. A lot of people like to bake the soup with the cheese toasts,

As long as you have a good container that seals for the soup, traveling with it is super easy. I’d recommend wrapping it in plastic wrap and putting in a bag to avoid spills.

Cook the wine down a bit, just till it stops smelling like alcohol. This will mellow the flavor. Then you can add the broth (I assume you’re using beef broth?). I also recommend fresh thyme. Are you making the cheese toasts to put on top?
