Latest homebrew is this 1858 Tetley A Bitter recipe from Ron Pattinson’s book. It’s way more interesting of a beer than I expected. All pale malt. 90 minute boil. A ton of EKG hops all at 60 minutes. I think I love it. Wish it was hand pumped from a cask but I haven’t figured that out yet.

Pulled the first pour off of Estonian Dreams for my birthday this evening. Timed it! Baltic Porter. Brown, Black, and Chocolate malt. (No roasted barley) Four week lager ferment followed by four weeks cold conditioning. Worth it.

Beginning the De-Christmasing process. Drinking the beer that started it all in proper glassware thanks to a wonderfully nostalgic gift. Wouldn’t say it’s one of my favorite beers but definitely is a treat right now. The glass couldn’t feel more right.

Home stretch of holiday break, thought I’d do a homebrew post. Admiration, our Belgian holiday ale we’ve been brewing for about ten years. All the malt: pilsner, special b, aromatic, caramunich, melanoidin. Pear juice from our pear tree. Cardamom, coriander, nutmeg, and grains of paradise. 8.5%

Took the boys to Rohrbach Beer Hall to see Santa today and it did not disappoint. They did a wonderful job.

I’m still homebrewing beer though. This is Night Night Trees, a barleywine. 8.5%. All the fermentables come from barley, pretty much a 50-50 mix of maris otter and regular two row, but also a hint of crystal 10. Some juniper in the boil along with a bunch of classic American hops. Bitter and floral.
