You're missing the point. TX wouldn't be joining the Blue in this hypothetical. The amendment would just be making secession legal. States like TX would ratify with dreams of creating their own red nation-state, and in doing so open the door for 10-12 blue states to create their own Union

Full disclosure: never made a loaf of this in my life. That's my wife's thing. I just know what I know from talking about it with her and what I've observed. I'll ask her where she ordered the covers from

Yes, definitely have to cover it. We have wood (bamboo?) bowls with fabric liners, and plastic wrap bowl covers that stretch over the top

The dough will hold longer than that. Feed the starter in the morning, do all the stretching/folding in the afternoon/evening, then let it proof in the fridge until the next afternoon, and bake that evening. We've never had issues with 'overproofing' doing that
