They're still tied to poor decision making. The Wiiu, virtual boy and recently switch2 are a testament to that.

Sitting on top of some of the most profitable IPs out there can only save you for so long.

Not true either. Fidelity is ultimately a decision based on art direction an narrative that comes with a huge demand in tech, but said tech -now more than ever- is avaliable to everyone. Only genuine limitation you have in terms of gamedev is, ultimately, scope.

They chase trends as much aa everyone else, key difference being them years behind everyone else.

Thats... not true? Nintendo has a cultural monopoly on the industry since they seized a good chunk of the industry from atari. Whatever "independence" they have is the result of them being owners of their own brand.

Gamers arent, in the broad spectrum of people that play games, favor something that looks more realistic over something more stylized. Its often gameplay what drives that shift.

Still, the idea of a game looking gritter has probably less to do with appealing to a broad audience (stuff like overwatch is a testament to that) and more with the age old idea that tech has to be pushed on top of art direction and not vice versa.

I think that the real breaking point is call of duty and Gran Turismo on ps1, where there was less focus on stylization and more on "fidelity": a term that basically became the poster boy of anything walking towards the canny valley.
