Not sure what version you're playing or how much has changed between versions, but I picked him up in 6 and made a handy-dandy infographic about them that at least helped me get my head around them. In 6 at least you had a few 'go-to' moves out of each stance and then some funkier options to toss in
A flowchart of Maxi's stances in Soul Calibur 6. Non-stance moves that lead into the stance are in boxes with dashed borders. The moves wtihin that stance are inside them, and the moves that go from stance to stance form a web of interlinked arrows.

Really enjoyed @jacobgeller.com's recent video on "How Well Can You Really Know a Game" (www.youtube.com/watch?v=cSrP...), especially the segment about the quest for "perfect play" vs just letting things happen and reacting to them organically - it especially reminded me of fighting games.
