The biggest differences are that the world is not as big, you can't be stealthy at most times and, at some point, you kinda HAVE to play online to beat the most powerful beasts.

In general, Monster Hunter is never about just "beating big dragon to death"
You have to track the monster down, learn their moveset and weak points, prepare resources for the hunt like traps and potions (that are crafted with resources you gather in the wild) and even eat meals during the hunt!

About the life bar, you usually track down the Monsters life by watching its behavior, like if it looks tired or if it's limping.
And yes, the monsters have weak spots that you can aim for to disable some of its abilities (such as cutting their throat so it can't breathe fire)
