Never seen water hyacinths before, looking it up it's really pretty. It might be possible, grow lights are good because they need plenty of sun, and with indoor tanks that sounds even more viable. Not as much documentation on them as full sized lotuses from what I seen.

I might have some good news on Lie Huo, it got picked up in English by Rosmei, and they said it will be released in 2024 in a teaser. (Other one sounds interesting. I'll have to keep an eye on that one.)

I did make some changes on the kelp part of the recipe. I boiled it like with miso soup to extract the umami, and put it aside to add later if I decide to. I was worried it was going to fall apart, go slimy and go bitter.
