There's always Project 06 by Chaos X. Incredible fan-made remaster of Sonic 06 that's still being worked on but a lot of the game has been released.

Sadly, Sonic Team has already said they aren't going to be putting efforts towards remakes or remasters for a bit. I think we are likely going to get a game focused around Amy and Metal tho. I'm excited for whatever they are cooking.
