Japanese-inspired vegetarian eggs benedict:
Oyster mushrooms with togarashi, poached eggs with sancho pepper, and a hollandaise sauce with yuzu juice. Wasabi microgreens garnish.

The peppers give this a nice citrusy kick along with the yuzu in the sauce to cut through the heavy presence of butter.
