tonight was chicken karaage! feat. poorly chopped cabbage and broccoli. doesn't matter. chicken was amazing, with this tight, crunchy crumb, and a nice light soy/garlic flavor on the inside.

heavily marinated halal-style chicken and rice with sides of (kinda messed up) roti and (leftover) salad! it was so much fun. even on the simplest nights I truly love cooking. 🍽️

I made fish and chips for lunch today and it was my first major "I did this" moment. Like. I'm bewildered that something like this came out of my kitchen. watching it come together was magic. it's kinda funny that I've only felt this for... just some fried fish! but I'm so happy with it. 🍽️

i think i've prettymuch figured out the basics of curry! using more roux blocks got the consistency down right. and velveting my chicken made it perfectly tender! i've even incorporated a secret ingredient that adds a nice slightly sour tang that plays well with the overall sweetness. SO good. 🍽️

it's schnitzel! something about flattening cutlets is so satisfying. i use the back of a knife to do it and it's nice to just watch the meat spread out. was super fun to make but i'm having trouble keeping my fry oil clean? i have a wok strainer but i must be doing it wrong. well, it's tasty! 🍽️

mapo tofu!!! this was so much fun to make? it's so easy! uncomplicated! and really tasty! well, i went a little too hard on the soysauce, but it seems to have mellowed out by the time of serving! 🍽️

this is~! fried tilapia with a soy-lemon-garlic glaze and roasted veggies (carrot/asparagus/potato), served over rice! i'm so happy with how this came out. frying the tilapia before glazing gave it such a good texture - i used to cook the tilapia in the glaze itself but this is SO much better. 🍽️

spaghetti! 🍽️ it's so much fun to make. i start my sauce off by frying some bacon/shallots/garlic/onion and chopping up the crispy bits to incorporate into the tomato sauce later. it's SUCH a boost to the flavor. i love it.

i missed a day (last night was a pizza re-run, WAY easier the second time) but here's tonight - chili! i make it good enough to make my texan girlfriend happy. that's a serious pride point for me. 🍽️

homemade sesame chicken! this is J Kenji Lopez-Alt's recipe. super good but I had a lot of trouble with keeping the dry coat from clumping. and a little more bitter than I expected? but super good. 🍽️

valentine's dinner! the gf and i cooked this one together! 💝it's pan-seared salmon, sauteed asparagus, and a very healthy amount of mashed potatoes. one of our favorite meals and getting to make it together today was so so so sweet! 🍽️

a very late but very tasty dinner. chicken marinated with chipotles in adobo, served in a sandwich with a side salad and oven-baked fries! it's so good? it's so good! i can't believe i got this done on a day like today. 🍽️
