Any tips for cooking fish to the perfect done point? I'm so afraid of undercooking it that mine ends up rubbery every time.

I read the first part a few years ago and now I’m starting part two. I can read Spanish, but some of the words are so archaic that I picked up a copy of the Smollett translation to read alongside and make sure I didn’t miss anything.
