Creole seasoned pollock fish, roasted veggies (carrots, potatoes, parsnips, green pepper, onion), kale salad w/ golden beets, feta, and olives.

The vegetables were simply peeled, tossed w/ olive oil, salt and pepper, then roasted @ 375.
Fish cooked on the same pan, with EVOO & creole seasoning.

Salmon & Swiss burgers on toasted sourdough bread with spicy kimchi yogurt potato salad, arugula salad w/ lemon Romano dressing

Finely chop spicy kimchi, add to plain Greek yogurt w/ a tsp of mayo, salt & pepper, toss w/ boiled potatoes or use as a topping for burgers & sandwiches. It is delicious.

Did you know that leftover kale salad will hold up in the frig overnight even with dressing on it, & still be firm the next day? 

It had been dressed w/ olive oil & lemon juice, which preserved the apples & Gruyere cheese.

Served with some leftover carrot & cauliflower soup.

A perfect lunch!

Carrot and cauliflower soup, air fryer roasted cod with old bay, purple rice cooked in chicken broth in my microwave, pampered chef rice cooker, and a kale salad with chopped apples and Gruyère cheese.

Spaghetti squash and ground pork Szechuan stirfry:

I didn’t have any green onions, but to make it more veggieful, I threw in some frozen chopped spinach.

Fast, easy, and tasty. We served it with some whole wheat sourdough bread.

Simple baked, sockeye salmon, with only lemon, dill, salt and pepper. Served with potato and dill vegan pierogies from my local farmers market, and brussel sprouts.

The pierogies were pan, fried and olive oil, then steamed for a few minutes to soften them up. This gives them a great flavor.

We love a farmers market for fresh, organic, and sustainably raised produce & meats.

This week we bought: sourdough bread, ground pork, pasture raised eggs, kimchi, carrots, shiitake mushrooms, kale, spaghetti squash, dill&potato pierogies, brussel sprouts, and red potatoes.

Baked cod: salt, lemon juice, bake @350 10 min’s

Ragout: sauté onions in EVOO, add 1/2 can tomatoes, 1 tsp garlic, 3/4 tsp oregano, 3/4 tsp sweet paprika, salt & pep, simmer

Parmesan Polenta: follow instructions, cool, add milk,1 raw egg, parm, salt & pep. Mix & bake in oiled dish @ 350 ~ 15 min.

Italian salad made with mixed greens (including extra spinach), uncured turkey pepperoni, cheese tortellini’s that were tossed in an Italian vinaigrette, halved cherry tomatoes, and some bread cheese that was heated in a skillet with olive oil. Delish!

Because sometimes you just need a good pork chop…
This meal aligns with the Medi way of eating because my protein portion size is small, the potatoes and onions were cooked in olive oil, and the largest portion on my plate is a green vegetable.

Pizza pasta!

Sour dough pasta, no sugar added organic marinara, sautéed green peppers, onions, and mushrooms, then topped with uncured, turkey pepperoni and fresh balls of mozzarella.

This was such a treat to come home to because my husband prepared it for dinner tonight! It was delicious!

Spicy Barbequed Coho Salmon, roasted at 375 for about 12 minutes.

Brown rice cooked in organic chicken broth.

Cabbage salad w/ mandarin oranges, green onions, cashews, & Chinese crunchy noodles. Homemade dressing: sesame oil, honey, soy sauce, orange juice, ginger.

Cajun spiced chicken breasts cooked in iron skillet with olive oil, finished in oven @ 375 for 10 minutes.

Skinny Mash: boiled potatoes & carrots, drained then added sauteed garlic, chicken broth, Greek yogurt, salt & pepper.

Wilted spinach.

Spaghetti squash w/ marinara & spicy Italian chicken sausage

Slice squash, remove seeds, drizzle w/ olive oil, bake open side down for 45 min’s, @ 400°

Heat a low sugar, all natural marinara

Air fry spicy Italian chicken sausages from Whole Foods, all natural & no preservatives

Top w/ Parmesan!
