I keep my starter at 50%-ish whole grain and make the loaves 10-20% whole grain -- I love the extra flavor and chew

Sourdough is absolutely related. I've started making sourdough for my neighbors and friends and it's been fun to experiment but not be limited by just what I can eat. I've got 45 sourdough rolls to take to the local shelter today!
