I’d recommend you still marinade (longer the better)
Still pan fry it first for color
Use an oven bag when you put it in the oven to keep it moist

I’d recommend pan frying instead and then the oven so it gets the right color. Especially if you have a cast iron pan.

Off the top of my head I know- brown sugar, soy sauce, scotch bonnet peppers, that walkerswood jerk seasoning, I like to put lots of garlic. Cut into the chicken a little so it gets all up in it. Let it sit in the marinade for seven hours then you grill it while still basting it with the marinade.
