I recently moved to Dublin, Ireland 🇮🇪 so I will be collecting everything I learn about Irish food culture and cuisine under this thread. #food #dublin #ireland #globalfoods #foodculture 🍜
🧀 Cheeses of the world: Sheep’s cheese with black garlic from Castilla-La Mancha 🇪🇸

This is one of the best cheeses I’ve ever had. It’s a sheep’s cheese from Spain, specifically Castilla-la-Mancha, a tomme de brebis with black garlic inside.

🇨🇭Local Foods in Geneva, Switzerland: Tomme de Genève

When I visited La Halle de Rive, Geneva’s famous indoor food market, I set out on a quest to find cheeses that are local to Geneva. In one cheese shop with over 300 cheeses, none of them were made in Geneva.

🇮🇪 Local food in Dublin, Ireland: The Onion slice

A proper thick onion slice from a chipper (Savoy Takeaway, Fitzgibbon st.) is a thing of beauty.

So I had an Irish breakfast/fry up yesterday at a place called Brendan’s. Stonking. Very filling, authentic without unnecessary fanciness. Just quality - tasty, well cooked ingredients. The rashers were meaty, thick, not too salty.

Some very serious sensory analysis (alongside good banter and tasty Guinness) was done today in a pub with the help of two mates… The goal? To determine our take on the best crisps Ireland has to offer. Stay tuned for the results! #dublin #ireland #food 🍜

The other day I tried a traditional cake called the Tipsy cake. Oh boy was it good - but it also gave me acid reflux. To be fair, in my gluttonous state I ate the whole massive cube at once - you only need a few bites of this to be satisfied.

🧵Thread: What a babka is and why you have to try it

📍Boulangerie Mamiche, Paris, France

Babka is one of these irresistible pastries that captures your attention immediately upon entering a bakery with its beautiful chocolate marbling that laces a fluffy, fatty brioche.

Sticky rice (kao niaw muun) with mango is one of the most famous desserts of Thailand and it is to die for.

Sweetened coconut cream is poured on top of just cooked steamed rice that has been perfumed with a pandan leaf. The rice absorbs all the cream when left covered (1/2).

🧵Thread: What I ate on my summer trip to Marseille
1) Fresh pizza by the slice for 2-3€ a pop.

Marseille is a great city for pizza.

Wood-fire ovens, fresh produce, and skilled pizzaiolos guarantee a delicious bite for a cheap price. I chose flavours like mushroom or anchovy.

The soup of the day at the Brú na Bóinne Visitor Centre was mushroom - savoury, vegetal, slightly sweet, but above all, a warm, thick comfort dish for a chilly day. The soda bread was exciting with pumpkin and sunflower seeds, a stroke of proper Irish butter, and a sprinkle of salt. #food #dublin 🍜

New things tasted today:
Ballymaloe relish.
Acidic and sweet, tomatoey, slightly christmassy due to the sultanas in it. Works great with a sausage roll. #dublin #food
