I'm not sure holding it would be much useful on a touchscreen (it'sstill a good idea though), but having the symbol appearing somewhere on the Shuffle screen would help associate the icon with its function.

Since 1.7.3 you can click a tile before the end of disappearing animation of the others, EXCEPT when there were less than 2 spaces around. Then you must still wait for the animation to end.
