As for mixing, if you are going to use the fermented honey I would say go for broke and use just that.

Kurt was thinking of heating the fermented honey to kill the wild yeast before brewing with a known (introduced) yeast. Basically pasteurization I think.
Elizabeth Kalmbach informed me about banana esters (well she clued me in a bit) and I learned that esters are used for flavor.
