Sounds like you're have consistency issues, which can be fixed! Wet ingredients should be measured by volume, not using cup scoops. And using cup scoops for dry ingredients can result in drastically different amounts, cup-to-cup. If you don't have one, get a kitchen scale, and weigh all ingredients.
