I suspect some of them may have a human involved somewhere perhaps with canned responses to choose from. Totally just my guess though. I'm sure I've also seen some of them interact with each other.

Have you looked into Jitsi? I don't know enough to know for sure if it fits all your needs but I think it's worth looking into. Jitsi is open source but there's a relationship there with a company called 8 x 8.
