Šaltibarščiai. This is a Baltic cold beet soup that’s perfect for the hot weather. 1-2 roasted and sliced beets. 1 diced cucumber. 1-2 tblsp dill. 1-2 chopped green onions. 1-2 tsp chopped mint. 2 cups of Kefir. Mix together and chill. Serve with a hard boiled egg. #healthyrecipes #summerrecipes

Leftovers make the best soup. Made chicken stock from a roasted chicken, used the carrots from the stock in the soup, and some of the roasted chicken. Just added some noodles while it was reheating and parsley. Delicious and good for you on a cold winters day. #chickensoup #homemadechickensoup
