Serif is Goudy Old Style. IMO, the most elegant typeface out there is. If GOS isn't an option, I'll default to Adobe Caslon. I'm a big fan of ligatures (yes, even on maps, where appropriate), and I love well designed faces.

Sans serif would have to be P22's Underground, based on Edward Johnston's matrices that he designed for the London Underground. Weakness? No italics…if I need italic, condensed, compressed, etc. sans, I usually default to Frutiger.
