After dinner tonight we had chopped apple cake. Wanted a dairy free cake - this one uses oil instead of butter.
Recipe calls for bicarb soda, but I don’t think any of the other ingredients are acidic. May try with baking powder next time. Looks like a brick!

Here’s the recipe. It calls for desiccated coconut which is unsweetened in Australia. I used to be able to buy it in Whole Foods in the US.

Just pulled these cheese & coconut buttons out of the oven. Omg the aroma is wonderful. They have a pinch of cayenne for a bit of a kick. Very easy to make. Serve with a drink or just gobble them up. 🍽️🍜🧀🧈🥥

These are boiled fruit cakes and only cook for 60-70 minutes, so relatively easy. Phew.

Dinner tonight was Mediterranean lentil soup. Weather turned cooler today, so it’s soup weather again. Pretty good and very easy.

Christmas cake No 1.2. Hopefully this is good. I used a boiled cake recipe so didn’t soak the fruit. Have it a drink of rum straight out of the kitchen. Smells fabulous. Now for a long slow cool down. 🍽️🍜🍇🍒🍹
