Ah damn, yeah that's tough, and usually involves a lot of fiddling with the configs too. I mostly work with Soundfonts from games and such but depending of what kind of music you wanna make it might be hard to find some decent free VSTs / Instruments.

Yeah FL can be kinda hard to work with. What I generally do is compose the score in an editor like GuitarPro or TuxGuitar (free), convert to Midi and then import it to the FL timeline.

Depending of your musical knowledge you can try Bosca Ceoil, it's pretty easy to use but can only do 8-bit stuff
