The M4 Mac Mini will feel amazing. When I switched from a 2014 Mini to the M1 Mini the improvements I’d have been happy if I’d paid double.

Get 2TB, then get additional external storage later if you need it. My Mac has 500GB. However has access to 12TB external storage.

I recently completed RDR2 even though accidentally read about the ending a few years ago. It is definitely worth playing. Is a work of art rather than just a game I’d say.
