I think folks beat me to it. Under assistant settings you're looking for "digital assistants from Google". Then swap back to the default assistant. They definitely did not try to make it obvious.

I fought with that for like a month before I learned you can revert Gemini back to the default assistant. Terrible "feature" that removes half its functionality.
