I think I'm too late but I just made a lentil soup with an onion, celery bunch, two carrots, ~ 2 cups of dry red lentils, veggie broth, cumin, and a lil bit of tomato sauce! (And garlic.) I forgot the kale leaves. It was really good though!

here's the chicken soup recipe I've been using: first, cook some garlic and an onion, and once that gets going put a few chicken breasts in there (1-2 lbs) and a bunch of seasoning. Then add the tomatoes and broth and bring to a boil 15 min; corn and beans, 10 more min. Shred chicken & done!
