So far I'm only two days into the process, and I need to go through several discard/feed cycles before it's actually ready to use as a starter, just like with typical sourdough starter. So far it's smelling quite yeasty but also cheesy and sort of floral, like sake. I'm doing some experiments...

The koji is a type of mold (not yeast) that inoculates the rice, and releases sugars from the process. Then, as it is released, the natural yeast (which is found on raw rice) feeds on these sugars, and at that point acts the same way the yeast we're used to does.

There’s a random town that I came across in Kansas (Lindsborg) that is filled with locally designed/painted Dala horses and knitting. It’s gotta be one of the most cared for towns I’ve been to and absolutely did not expect that out of Kansas. It’s like from a different era

Not the same issue but this does remind me of how actively hostile the subway stations in NYC are. I had to spend significant portions of my life in literal dank pits like this one and I think it caused me irreversible psychic damage
