I always rinse and pat dry. And personally I like a mix of flour and cornmeal for the tomatoes AND okra because I like that extra crunch! But okra and tomato is the best thing ever over rice (besides a proper gumbo) and also just plain tomato gravy over white rice with okra and sausage (or bacon).

Hey from west central GA!! Okra is absolutely beloved in my house. Boiled maybe no - little slimy without the right prep, but otherwise, yes to all the things (and especially okra and tomato mix with some peas, cornbread, smoked sausage, rice....yes please!!!)
