I put a 5.05 lb roast beef in the oven at 500 for 25 mins, then turned off the oven and left the beef in there for 2 hours. It will be perfectly medium rare after it rests for 30 mins! Here’s a selfie and I only AI-ed out my forehead wrinkle.
