Nice! Yeah, Las Cruces reminded me of Lubbock, just with more mountains and water. I'm trying to hold out 9 more years here so I can retire early, but I may also become a NM resident if Texas keeps Texas-ing at its current rate.

What part of NM are you thinking about? I spent a few days in Las Cruces over the summer. Not sure I'd want to live there, but it was a neat little town nonetheless.

That's been my biggest frustration with the platform. I miss being able to lock things down so only friends can see my posts.

You can kick it up a notch by stirring in a pound of ground sausage or beef (cooked separately). But yes, Rotel queso is a staple down here in Texas. So easy, yet so tasty!
