As much as I love cheese, it isn't always necessary.
My mother-in-law used to make "goulash" which I loved, using wide egg noodles, ground beef, tomatoes, no cheese, basic seasonings.
Changing up the pasta and seasonings is an easy way to add a little variety to your meals, too.

I've made mac and cheese with ground beef and tomatoes since I saw a recipe years ago. I've always used regular canned tomatoes but will try stewed tomatoes, now. Should step it up!

Many years ago, my mother made grilled cheese with sliced tomatoes. Still my favorite.
