Oh that pb cookie recipe sounds yum! I’ve used this recipe a few times with gluten free flour & added xanthan gum (unless the gf flour already has it), I find the xanthan gum helps a lot with texture. The texture is pretty chewy and crisp on the edges but ofc ymmv: youtu.be/f-M3JN_7LGU
