Well, I baked 24 whole wheat sourdough rolls to bring to church potluck today, only to find out that this specific secret-recipe church-lady potluck main dish comes already sandwiched on store-bought rolls.

So I get to keep 15 of the 22 I took to church, anyways. They're delicious!

I am never going to be what completing my dissertation was supposed to be for.

Frankly, that ship sank in harbor a decade ago, when it became clear it would never be a living. And so I focused on what differences I could make, mostly at home.

Being an academic is a nice hobby, but that's it.

And I managed to divide the 3 loaves fairly evenly! ~2.5 lbs each, mostly-whole-wheat sourdough, a little bit of rye for flavor, nothing fancy, but good.

(With 3 I usually wind up with one either much bigger than or smaller than the other two.)

Got a new huge 7.5qt steel bowl for bread baking, and enlarged my bread recipe.

My old 4.5qt bowl couldn't make more than 3 kilos worth of dough and would get flour everywhere at that. I am having a good time!

It's also all about the burned butter bottom crust, from salted butter to grease the loaf pans for extra flavor.

Bread! A good 2/3 whole wheat, started with rye, and I'm just glad the skins didn't break as they were proofing. Long fermentation on a rye sourdough is a recipe for protein soup instead of protein structure, but I seem to be figuring it out.

Upper wisdom tooth extraction Thursday night, so I am doing all the things that I won't be able to do for weeks after. Including baking all the bread known to man. 3 loaves in, 2 foccacia out, deep dish from lunch half eaten.
