It wasn't quite allowed in america yet. But then he did it, canned it up, and started selling cheese. So i think??? Ww1. He started selling to the military and it was cheese! It made rations edible! Then during prohibition, all the beer canneries started trying their own brands of cheese.

SO CHEESE used to be fresh only. Preserving was not a thing. You had to cut it off the brick and then it would dry so youd have to cut off and throw out the dry. Then youd take it home but it'd go bad in 2 or 3 days.
