Quebec went from the most religious province to the least in a generation. There’s that + immigration panic - some Quebecois are paranoid about their special identity being diluted. It’s expressing itself in the ugliest way.

Given these are people I’m acquainted with, I would look at it more narrowly. And hence my surprise. It was also a service shoot, you don’t always have full control of your crew.

See, this is what surprised me about the whole thing - this is a company with decades of experience and a reputation for ethical conduct shooting wild animals. We tv makers have to be licensed and apply for permits that are explicit. Very odd.

I was so surprised when I read this, back when it came out - I’ve met the owners of the company and they are hugely respected in the natural history doc field. I’ve often wondered how it all played out.

At least poutine has a proper gravy! And it definitely is not for everyone, often an acquired taste. Like, it’s definitely a Quebec war thing that has taken off. Those of us in Anglo Canada have come to it pretty late. Wasn’t a thing in Western Canada at all until 15 yrs or so ago.

Sure, but it came off as a little hostile. I mean, horrible? Flippant, sure. Definitely not absolute. I mean, it was almost as weird as your gravy. 😉😆

Also, “horrible” is a little over the top. I think it was a pretty mild opinion. Compared to what I know is gravy, southern gravy is pretty freaking weird. I never said anyone was wrong for liking it. Another example of how Canadians are different than Americans. 😊

I don’t think having the opinion that something is weird is speaking an absolute. It’s clearly a subjective opinion. What really makes me pause. Is how upset people get when you say “yeah I tried that thing and I found it kind of strange and not to my taste.” It’s not like it’s a personal attack.

Just because people from one region eat it doesn’t make it not strange to people from other places. I’m sure there are plenty of dishes that have been eaten for generations elsewhere that you wouldn’t be keen on.

“Gravy” as you know it is a lot like white sauce to the rest of us. 🤷‍♀️

My hack is to melt the butter, then let it cool a bit before adding to the egg yolk. Hollandaise is pretty easy if you prepare ahead.

I don’t take issue with the biscuits - it’s what they call “gravy” that’s weird.

(Yes, I’ve had USian biscuits and gravy, the biscuit was very nice, the gravy was sort of like a white sauce. Just wrong.)
