I do not disagree! In reality the biggest problems with all windows systems is that they throw everything into the OS and hard to remove un-needed stuff. Security is more of a holistic mindset than a single platform. If the system is too complex (overly broad) it becomes hard to make secure.

I would lean node/python or maybe rust.
node and python are the most approachable for other creators and already well tooled for cross platform. C++ is a pain IMHO to work with in the modern era too much of the tooling seems dated and less than ideal.
