Yep, you can do the tour or whatever you want. Some companies include a "free" tour in every place they stop but it's part of your cost.
Some tours are really good because you get taken somewhere - think wine tasting etc. Some of the companies get exclusive access to museums etc.

Make sure you go the same direction the river flows (coz you get more time in the towns) and choose a company that fits your needs. Some do all inclusive (booze, trips) and some don't.

As far as I can see you're up against companies that employ people and algorithms designed to get them noticed in social media. At the very least everyone should be able to opt out of all this tat.
