I only tried Khao Soi for the first time a two-ish years ago but it’s the best of both soup and curry imo. I usually order curry at Thai places and my wife orders this so I luckily get to eat the crunchy bits.

Okay, I did grow up with this but no one ever made it at home. Now that I’ve done it several times, I can whip up 2-3 servings of egg drop soup in just a few minutes. A fav after late night workouts when I’m hungry but don’t want something heavy.

I guess this will be a thread of soups I like that my midwestern white woman self did not grow up with. My MIL makes amazing Arroz Caldo. I’m always surprised at how simple it seems (bc rice and chicken?) but the depth of flavor is wow.

A few years ago I was introduced to Sichuan beef noodle soup and it’s become a favorite when I have any kind of head cold/stuffiness. Spicy, numbing, and so good.

It looks like there are similar ones on Amazon and it’s pretty good for small spaces. Would work best with the smaller varieties of tomatoes that aren’t too heavy.
