Do you know about asefetida, aka hing? It's a spice that adds a similar umami flavor. You saute it in oil before adding food to the pan, just like with onions.

I was fine reading all your restrictions, many of which I also have to follow -- except for chocolate. Which I also need to severely restrict, but these last few months those restrictions have gone out the window. Hugs to you.
