Today's late lunch. I asked that they make the dishes less spicy since I was coughing. The chef was kind enough to accommodate my request. They even prepared ginger tea for me.

Today's carinderia adventure: old-school Capampangan sigang bangus - maputi, no tomatoes, with pusu saguin, and gandus (gabi) to thicken the broth. The usual veggies of kangkong and yard-long beans also.

Red from being braised over all the soy sauce and spices over a long period. I can attest to the gradual change of hue, if the seven-day braising period is followed. Here is a photo of humba I ordered from a local restaurant. It is always served with a fresh (dessert) banana for a flavour contrast.

I want to transfer from the app that went to the dark side a thread on pacsing bangus (vinegar-stewed milkfish) that turned into an enlightening discussion on Philippine regional food preferences. Should I screencap all replies? Tedious! But it could be worth the effort.

I'll give it a little Filipino flavour by sautéing the turkey in lots of garlic and ginger, add washed glutinous rice before the water (look up Filipino arroz caldo recipe). Then garnish with lots of fried garlic, spring onions, calamansi, and sliced eggs. Chilli-garlic paste is optional. 👇

Classic combination of lagat/sisig pusu saguin (banana heart blossom sautéed with pork & shrimps then stewed in vinegar) and baruya/tortang alamang (Acetes sibogae, very tiny shrimps like krill) fritters.
