I second chuck roast. Prefer to smoke it and then braise in the smoker or finish it in instant pot.

You can throw them into the smoker, go prepare everything else, then finish them off.

You can also bump up the smoke temperature or grill them longer if you don't have much time.

Quick, inexpensive, and it lets you explore what the setup can do.

Pork chops - preferably thick cut. If your Traeger is a combo that smokes and grills, smoke them 90 minutes at 225°, pull them, crank the heat, and sear them to finish. Giving them a spritz of apple juice/cider vinegar every 30 minutes helps. Season however you want.
