1. It really depends on what kind of food you want to cook. For example, if I want to have a nice crust, e.g. for a steak or a smashed burger, I would definitely go with a (cast) iron / stainless steel pan. But if I want to sauté some delicate food like vegetables, I would go with a non-stick pan.
