man, this entire field of study is cursed. the basic theoretical problem is that "processing" refers to some kind of change in texture or chemical composition... which means "cooking" generally, is actually processing. that's why the boogieman is "ultra-processing"

Consuming large amounts of ultra-processed food (UPF) increases the risk of an early death, according to a international study that has reignited calls for a crackdown on UPF.
