I guess that would be ~1.5-2oz psyllium husks to about 4.25 pounds of flour blend? Mixed extremely well as dry ingredients, and then enough liquid to hit desired dough consistency after mixing.

I've had success doing xanthan --> psyllium husk straight across by *weight* rather than volume, and the recipe I use now is best with 150% of the weight of the originally called for xanthan, and then adjusting water up until the consistency is right, which is…not a great answer, but the one I have!

Loopy Whisk is NOT trustworthy on psyllium doses in my experience. Someone is going to make her bread and wind up in the hospital.

(imo psyllium is much better gluten replacement than xanthan gum, but do not trust internet randos, bloggers are out there writing recipes that could kill a cow)
