Adapted fr "Irish Country Cooking," Darina Allen
Potato Soup
2 Tbsp butter
1 med. onion, chopped
2 carrots & 2 stalks celery, chopped
8 medium potatoes, diced
3 1/2 c. chicken broth
2 c. milk
1 1/2 tsp thyme, parsley, marjoram
1 tsp paprika, garlic powder
salt, pepper to taste
pinch of mace
