The bacon grease can be reserved for future cooking applications. You can optionally substitute egg whites, turkey bacon or turkey sausage, or any low-fat cheeses of your choosing and you can downsize how much of each ingredient to fit your budget or number of servings needed.

Add your breakfast sausage to the pan and brown the sausage until it is fully cooked. To the pan now add your scrambled eggs and cook until done. Add in your shredded or slice cheese first and mix until melted. Next add your blended cottage cheese and then the crispy bacon bits.

To a small blender, add your cottage cheese with either milk or cream and blend until smooth like sour cream.

Once the bacon is cooked but floppy, turn the heat to medium-high to crisp the bacon up. You want a deep brown just shy of burnt. Strain off the rendered grease and put the bacon aside.

Take the bacon and slice it into half inch pieces. Put the bacon in a high-wall pan or pot and cook on medium-low to slowly render out the bacon fat.

As the bacon cooks, crack your eggs and scramble.
