I don’t know if Sargent ever said that but he definitely knew of it given his Spanish travels. A few years ago MFA loaned it to Prado so they could be in the same room. Someone who saw them said Sargent’s held its own.

I would make the ‘70s the starting point: Alice Waters in Berkeley, a number of similar restaurants around Cambridge and Boston and Seattle, Julia Child starting in 60’s, Joyce Chen on tv late 60’s.
