I'm dating myself, but I remember having to learn to use card catalogues and the Dewey decimal system to do research for school assignments.

I'm thankful to have lived through the transition to online references, but miss the ability to dig into sources and be able to cite direct references.

Well, I didn't find any balsamic to use in the sandwich, but whole wheat bread with pepperoni, pesto, and a mix of mozzarella and smoked cheddar made for a tasty lunch.

Have you tried mixing different cheeses to make your own blends?

I like a mix of medium cheddar, sharp cheddar, pepper jack and sometimes some Parmesan to make a crust on the outside...

I actually have a vintage toastie maker (sandwich press, over here) that I picked up recently as an impulse buy.

I was thinking to buy one new, but all the reviews were looking like cheap junk. A few days later I thought to check in a thrift store and found one for under $10.

I'd honestly not thought to put pesto in a toasted cheese sandwich, but those are all in my pantry, and it sounds delicious!
