The frozen turkey carcass is pretty solid, sticking out of the pot. As it thaws, it will sink. It’s gonna make great stock.
1 onion quartered, 3 celery stalks halved, 3 carrots halved, a small handful of peppercorns, salt, pepper, sage, a big turkey carcass w/pretty much ALL the dark meat remaining.
