Thank you! I also found girasoli, but only as a fresh, filled pasta - and in both cases the chef’s used a dried pasta. I’ll keep looking for them - someday I’ll find some - and probably in a most unexpected place!

I found the same pasta being used by Give Me Some Spice (givemesomespice.com/2011/05/capp...) and Mina kindly said she got it from an Italian cafe in Cambridge and it was called Cappellacci! I can’t find it online, but at least I know now!
